Also known as kiwicha, Amaranth was an important crop for the Inca empire and older Andean cultures. The nutritional value of kiwicha is higher than other cereals. It contains 15 to 18% of proteins, while other crops such as corn only contains 10%. In addition, seeds are rich in amino acids, such as lysine. This grain also exhibits a high content of calcium, phosphorus, iron, potassium, zinc, vitamin E and vitamin B complex.
